2 cups flour
1/2 cup sifted powdered sugar
2 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup butter
4 slightly beaten eggs
1 1/2 cups granulated sugar
3 tablespoons flour
1 teaspoon shredded lemon peel
3/4 cup lemon juice
1/4 cup half and half
STEP ONE: In a large bowl combine the 2 cups flour, the 1/2 cup powdered sugar, cornstarch and salt. Cut in butter until mixture resembles coarse crumbs. Press into bottom of a greased 13x9 baking pan. Hint: Line the pan w/foil and grease the foil with crisco, then you can lift bars out easily. Bake in a 350 oven for 20 minutes till edges are golden.
STEP TWO: Make the filling by stirring together eggs, granulated sugar, the 3 tablespoons of flour, lemon peel, lemon juice and half and half. Pour filling over hot crust and bake for 15-20 more minutes until center is set. Cut into bars, sprinkle w/ powdered sugar, cover and store in refrigerator. Enjoy!
And don't forget to "Spring ahead" this weekend!

Yum! I would have thought 5 or more eggs (?) so this is a healthy treat too!
It's actually very fattening :) but thankfully Mrs. Dottie and I never gain an ounce, no matter what we eat, in fact, we both weigh exactly the same as we did in high school.

Very Cas, I would recommend a citrus iced tea beverage. A tall glass of iced green tea, add orange or lemon slices for some zest.

Now wait just a minute Mr. Dottie, Betty, Now that I have purchased a handy kitchen tool called a "lemon zester" I think I may add a little more lemon peel in my next batch of lemon bars. Using the cheese grater was not fun.
Bill, very, very, OT here, Ron Angle has failed to file his appeal. Is that an acknowledgment that he ripped off the disabled son of his deceased brother. I think Ron Angle didn't appeal because he knows the Will he filed is phony ? What do you think ?

I will definitely make a batch of these.
Lemon rinds are not considered as edible food by the FDA and therefore are sprayed with very evil chemicals. So make sure you wash the lemons with soap before using or use organically grown lemons.
If I may, Id like to place my vote for "Comment of the Day" being Mrs. Dotties kitchen tip at 8:37 on Friday.

I have been buying mostly organic fruits and vegetables lately, but thanks for the tip anon.8:20 am. I guess I should be careful about the orange slices in the iced tea too.
